Please can I have your best pasta dish?

Am dropping dinner round to a sick friend tomorrow who loves pasta - but I need inspiration! Can't just give pasta and tomato sauce...

Chicken and chorizo pasta bake (or 4 a day pasta bake if veggie - tomato puree, sweetcorn, peppers, onions plus any other veg you have! Grated carrot is nice.)

For a really quick pasta dish I put butter, garlic, chilli flakes, lemon zest and a tin of crab meat in a big pan, heat through and then add spaghetti. It’s so simple but really delicious, especially with some salt or cheese on top. (I know butter/cheese and fish is a bad combination according to proper Italian cooking but I don’t care because it’s amazing Grin )

Cooked sausages mushrooms passetta sauce plus some green veg and tomato cubes cooked pasta - topped with grated cheese.

Place in the oven for 20 mins

My best is so simple.

Cook onions with chillis [sliced] in olive oil.

whilst they are cooking, put 100g of spaghetti on per person.

The onions need to be really brown when done, add loads of ground black pepper as they are cooking.

Once the spaghetti is done, toss in the onions, chilli and pepper, and then plate up.

Grate loads of extra mature cheddar over it and get stuck in.

Jamie Oliver's "Jules pregnant pasta" is delicious! It's a sort of sausagey tomato sauce with veg blitzed in.

Chillies and garlic fried off in oil and butter then a shed load of halved cherry tomatoes. Soften them for 6 minutes then serve with fresh pasta and Parmesan.

Veggie lasagna can be done in many ways.

I like just layering veggies sometimes i preroast them, othertimes not depending on veggies. i dont use tomatoe sause, i just layer tomatoes, and i make thick cheese sauce.

eg. thinly sliced cougette, carrot, tomatoes,
frozen peas
spinach.

Another vote for the jools pregnant pasta, it’s really easy to make and uses sausage meat so it’s very like a ragu, I up the fennel seeds and the chilli and it’s honestly delicious, I went veggie around a year ago and it’s the thing I miss the most :(

1 pack italian inspired sausages
1 packet of cherry tomatoes
2-3 cougettes, chopped

Skin the sausages and cook the meat in a pan with some oil. Add the courgettes and tomatoes and a splash of water. COver and cook for 20-30 mins, stirring regularly.

Add to cooked pasta and and sprinkle with parmesan.

Road aubergines whole until they're really soft. Put a chopped onion with plenty of oil in he oven at the same time.

Scrape out the aubergine middle, and add the drained onion. It will almost be sauce consistency already, but fork it a bit to make it smooth.

Add basil and Parmesan.
