Simnel Cake

Does anyone have a tried and trusted recipe for a Simnel Cake? I've never made one before so I had a look online and opinion seems divided between putting a layer of marzipan in the middle (Nigella for e.g.), or putting lumps of marzipan through the mixture ( Delia). Thanks in advance.

My son makes a fab one. It’s my fave cake. HE puts a layer in the middle. Mmmm. I’ll ask him which one he uses when he gets home from school.

I made the one with the layer in the middle (thought it was Delia tbh) and it was lovely!
