Your best puy lentil recipes please!

Hi folks, I have some puy lentils I would like to use up today. I often order them whilst out because I love them but rarely cook them! Any ideas for yummy meat-free recipes? Thanks Smile

I use them instead of mince to bake veggie shepherds pie and bolognaisse..

Also with cous cous, roast veg and pesto as a salad.

I used to do a really nice recipe, but it was topped with sausages - could you use veggie sausages?

It was something like carrots, fennel, onions and celery diced and sautéed until soft. Added in the lentils with a bit of stock, whole grain mustard and redcurrant jelly.

It was fairly similar to this

fry an onion, garlic and cherry tomatoes with herbs and lentils. Top with chunks of grilled haloumi and a squeeze of lemon.

So easy and delicious.

Carrots, onion, garlic, leek and bacon or pancetta finely diced, fry until soft, add veg or chicken stock. You can either eat it just like that or top with cod, chicken, sausages anything you like!

Ah I missed the meat free bit!! You could add different types of beans to the diced veg and stock.

Dhal makhani, there must be a recipe online. Made with puy lentils and kidney beans. Best tasting dhal I've ever had!

I have puy lentils dressed in balsamic and olive oil served with red peppers cooked with garlic, avacado, raw spinach, tomatoes, cucumber and grilled hallumi all the time

Lovely cooked in a bit of veg stock then stir through roasted veg and goats cheese or put grilled goats cheese on top. Bit of chilli and balsamic vinegar too.

Look up Lovely Lentils and find a guardian link to some yotam ottolenghi lentil recipes. The one with out lentils and tahini and a boiled egg is bloody delicious

I like to fry some thinly sliced shallots / red onions & red peppers until soft (or use jarred chargrilled peppers). Add the cooked puy lentils, some cherry tomatoes or presoaked sliced sundried tomatoes, fresh chopped parsley, oregano, & mint, & some cubed feta. Good warm or cold. This is one of my favourite dishes to make a big bowl of & then have leftovers for packed lunches. It's really good with greek salad.

Here's the Ottolenghi recipe mention further up the thread and it is indeed bloody gorgeous.
I make a stew with puy lentils - red onions, garlic, peppers, semi dried tomatoes, fresh tomatoes courgettes & aubergine if you want and some chopped up sausages all fried and then add the lentils with some stock. Finish with a drizzle of thick syrupy Balsamic and some extra virgin olive oil.
