What's your chicken soup recipe?

Just that really... after many awful attempts at making chicken soup, I've given up and resorted back to packets.
I've mastered the kneydls, but my actual soup always seems to end up too watery and tasteless even though I follow the recipe to the letter!

I just want to be able to make good, tasty chicken soup!!! Is that too much to ask?!?!Angry
My frustration is not helped by the fact that DD keeps asking me to make the stuff, just like nana does.
So, please enlighten to me as to how you make yours!

This is how I make it:
Cut an onion in half and put it into a frying pan over medium heat turning it every now and then until it looks browned and rather burnt, this will take around 10 to 15 minutes, meanwhile you can have the chicken carcass browning a bit in the oven, this is optional but by browning the onion and carcass you get more depth of flavour.
In a big pot put one or two peeled, sliced carrots, a celery stick also cut up, some sliced leek and a potato cut into small chunks. Add the browned onion, the chicken carcass and a chicken leg and thigh or other chicken parts with bone in. If you like you can add more chicken and use the meat for chicken pie or salad.
Cover with cold water add a bit of salt and bring to the boil, lower heat and every now and then skim off the impurities that come to the top. Put on a lid but don't cover completely or if you have a pressure cooker let cook for about 25 minutes, if you don't pressure cook it will need to simmer longer. When the chicken is cooked strain the chicken broth into a clean saucepan.
To make chicken noodle soup: bring the strained broth to boiling and add noodles of your choice, take the chicken flesh off the bones and add to the soup. Adjust salt.
If you like you can mash a little of the cooked potato into the soup to give it more body and some of the sliced carrot.
To make cream of chicken soup: put a bit of butter into a saucepan and when melted add some flour to make a roux stirring to cook the flour but without browning, add the strained chicken broth and bring to the boil while stirring, lower heat and simmer until thickened. Adjust salt and add white pepper if you like. Before serving add milk or cream and more broth if the consistency is too thick.
Add the chicken flesh cut into small pieces or keep for another recipe.

I normally use leftover roast chicken but if using uncooked chicken, cook or brown it first.

Add oil, salt & pepper, then onions to stock pot & cook til translucent.
Add the chicken & bones & fry off.
Add water.
Add chopped carrot & potato.
Add a knorr chicken stock cube & loads of thyme.
Simmer while making flour, salt & water dough balls & add towards the end.
Season to taste while simmering.
Remove the bones/shred any chicken off them.

Sometimes I add peas/sweetcorn or whatever other suitable things I've got waiting to be used up.
