Best ginger cake recipes please

It’s only me that likes ginger cake, so I never make them but I really, really feel I deserve one.
My preference would be light and moist rather than dark and sticky.

Any suggestions please?

I love ginger cake and this is the recipe I usually use - it is delicious! And really easy to make - pretty much foolproof (I once forgot about it in the oven for almost 2 hours and it was still nice)

Not sure where it is from originally - a friend gave it to me.

It does need a jar of stem ginger in syrup - might be a bit hard to find (i got some from a Whole foods) and is a bit pricey but 1 jar will last you for ages.

Double Ginger Cake

250g self raising flour
2 level tsp ground ginger
half tsp ground cinnamon
1 level tsp Bic of soda
a pinch of salt
200g golden syrup
2 tbsp syrup from Stem ginger jar
125g butter
3 lumps of ginger from Stem ginger jar
125 g Muscavado sugar or dark brown sugar
2 eggs
240ml milk
You can add 2 tbsp of sultanas but I don't.

You need a square cake tin. Approx 20-22cm.
Line this with baking paper. I tend to line it with an oblong of baking paper the width of the tin bottom, that just goes up 2 sides. That way you don't get creases in your cake around the bottom because the paper is flat, and you can use the long sides of the paper to lift it out, iyswim
Oven set at 200 C.

Sieve flour, ground ginger, cinnamon, Bic of soda and salt.
Melt golden syrup, ginger syrup and butter in a pan or microwave.
Dice ginger lumps finely and add, with the sugar, to the melted syrup and butter mix (and sultanas).
Beat eggs and milk together gently.

Add butter and sugar mix to flour, turning with a large metal spoon, then turn in milk and eggs mix. It should be a sloppy batter with no trace of flour. tastes delish

Put in oven for 35-40 (took me an hour) and test with wooden skewer that should come out clean.

Eat warm or when it's cool, wrap in foil and it's a great a day or two later.

I’ve just had ginger yoghurt! I’m in a real ginger craving phase.
