Mushroom free nut roast?

Hi everyone, I’ve got some veggie friends coming over next week and thought I’d make a nice nut roast. One of the pair doesn’t eat mushrooms (allergy) so was looking for a really nice one that doesn’t rely on mushrooms?

Is the nut roast replacing meat in a roast dinner?

I’d probably do something else instead like an onion tarte tatin. This one is lovely...

I use this recipe and just leave our the mushrooms

We will all have the nut roast, won’t be making meat as well. I’ll do a few sides as well. I love nut roast but have never made without mushrooms, was wondering if it was ok to substitute aubergine or something instead?

1 butternut squash - peeled, deseeded and diced
1 clove garlic - crushed
1 courgette - diced
1 onion - chopped
1 red pepper - chopped
1 tin chick peas
125g almonds
125g pistachios
1tblsp each rosemary and thyme
60g breadcrumbs
1/2 lemon - juiced

Preheat oven 180 fan.
Grease 23cm deep round cake tin.

Roast squash and garlic for 30 - 40 mins.
Fry onion, courgette and pepper.
Roughly chop chick peas, nuts and herbs in food processor.
Mix all ingredients together and put in tin.

Cook 50 - 55 mins.

I also do one with a mix of nuts, breadcrumbs and cheese, pressed into a large dish so it's quite a thin base - bake this for 20 mins until crunchy the top with either vegetables cheese sauce or red lentils and cheese and bake for a further 30 mins.
