Chicken breast
Onions
Mushrooms
Garlic
Bacon
Broccoli
Tomato purée
Peas
Milk

Obviously I don't have to use all of this but It's pretty much all I have ....

I'd like it to be heathy-ish, it's a meal for two.

Any suggestions gratefully received!

If you have some herbs and some pasta it would make a decent pasta bake.

Any pasta/potato/rice/carbs around?
Wrap the bacon round the chicken, and cook in the oven. Serve with brocolli and or peas (and potatoes).

Chicken, veg and bacon stew. Would serve with spuds if you have some.

Chicken breast goes quite tough in a stew so I would wrap the chicken in the bacon, brown it in a pan and cook in the oven for about 20 minutes.

I would make a mushroom sauce with the mushrooms, onions and garlic, and serve it with the vegetables.

Do you have rice? Could be a stir fry?

I'd cook the mushrooms, onion and garlic no stuff the chicken breast and wrap with the bacon. Then roast.

Serve with the broccoli (and any rice, potatoes or even plum pasta with olive oil, lemon rind and black pepper).

Just checked. I have thyme and oregano (dried), penne and chicken stock pots.

So, I would:

Cook the onions (chopped) chopped bacon and garlic in a little oil on a medium-low hob for 10 minutes until the onions are soft.
Cut the chicken into bite-sized chunks and add to the pot with the mushrooms for 10 minutes on a med heat.
Mix the tomato puree with some milk to a creamy sauce.
Add the tomato sauce to the pot with the peas, chopped brocolli, herbs, salt and pepper. Cook until the brocolli is al dente.
Cook the penne and then combine with the sauce, mixing thoroughly.
You could serve at this point or transfer to an oven dish and stick in the oven on a low heat (150) topped with grated cheese if you have any. If you're going to finish in the oven, take the penne off the hob whilst it still has a little firmness to it.

Thank you all! Two chicken breasts. I really want to prepare everything here and transport to DP's for cooking, so pasta bake is a great idea. I'm a novice and he's a trained chef (although very complimentary about my creations) so I will google "make a garlicky mushroom sauce" 😀.
