Family meal inspiration

I'm looking for some inspiration for weekday meals that can either be prepared at the weekend or cooked quickly. I have a fussy DH and a slightly less fussy four year old DD. They don't like the traditional family type meals like cottage pie, fish pie or lasagne. They both like pasta, roast dinners, and prefer things to eat with potato and veg on the side rather than one pot meals if that makes sense? I don't use the freezer enough, and would like ideas for things I can buy or make for the freezer that can be cooked from frozen. Daughter just started school and I need to get organised! Any ideas?

Oh tricky most batch cook recipes do tend to be one pot dishes. A few I can think of
Fishcakes
Homemade chicken kievs
Burgers
Jack Monroe carrot, cumin and kidney bean burgers are lovely and freeze well.
Chicken skewers

Would they eat curries? You could make those and freeze them -the same with things like tagines and bolognaise sauce

If they like potatoes, what about jacket potatoes? Not exactly quick but don't require much work.

Also, do they like fish? An easy dinner for us is salmon fillets - either fresh or frozen - with rice and/or green vegetables on the side.

Fish cakes and chicken kievs are a good idea. DH will eat curry but not DD, who is only 4, sadly. They do both love jackets and I often resort to that! Must start buying more fish. Don't know why they're so picky. I'll eat anything!

Think your DH needs to get less fussy, especially if he is fortunate enough to have someone prepare his meals for him Smile
