Fresh yeast

Yesterday i bought some fresh yeast to use in my bread machine, I have 2 questions
1, how long does it last?
2, can i just use it in any recipe in place of the quick action yeast? As the fresh yeast recipe didn't use a special setting and the only difference was more sugar and oil instead of butter.

Can't really answer the questions you asked but my MIL buys fresh yeast and says it freezes well if you're wondering about storing it.

I get it at the bakery in tesco (get it free) or sainsbury - charge pennies for it.

It should have a sell by date on it - normally doesn't last more than a couple of weeks. I often end up chucking it out because I forget about it I use it in the bread machine as I can only get fresh.

There is a "best before" date on the fresh yeast I buy from ocado. Maybe there is one on your pack too?


You can substitute dried yeast with fresh yeast (double the weight), I don't know about fast acting yeast though.


I also freeze fresh yeast, I roll it with a rolling pin and cut it so that I can get as much or as little as I need.

1 sachet of dry yeast is 7g which is the equivalent of 21g fresh yeast. As Fortunately said, it does freeze well. Break it down into smaller quantities in freezer bags for ease of use.

I got mine from the bakery in sainsburies, cost 20p. It does have a best before, but they are sometimes so short as to be silly.

If you wrap it tightly in cling film and but in a plastic box, it should keep two or three weeks. And I would say double the quantity of dried to fresh - 7g to 21g of fresh will give you a volcanic loaf!
Supermarket fresh yeast is quite potent stuff, and faster acting than dried.
