Really fluffy pancakes

I had breakfast in a cafe the other day where they made their own pancakes. So there were a range of breakfast options, which were pancake based, like back and maple syrup, or pancakes with stewed fruit.

They were amazing, one of the best things I've tasted in my life.

I can, and do, make decent pancakes but these were far lighter and fluffier than anything I've ever managed. I wish I had asked how they made them...But I didn't, so I wondered if mumsnet knows the secret to a really light, fluffy pancake?

I make them by separating the eggs, making the batter with the yolks then whipping up the whites and folding them in at the end. Sorry I don't know exact quantities, I make them so often I do it by eye, but I think the original recipe was Jamie Oliver's American pancakes.

I have tried that recipe a few times and whilst it's lovely, these were lighter.

But then I was wondering, does technique play a part? Eg if I'm cooking them at too high or too low a temperature, would that affect the outcome?

Oh, separating the eggs? I've never thought of that, but suddenly it makes sense. I bet that's it.

I use less cornmeal than she does though and make up the rest with flour as it's a bit rich for me

Yes, I was going to say the same. Separate the egg whites and whip them up to a meringue. Make the rest of the mix as usual but just with the yolks. Then, very gently fold in the whites to the rest of the mix. Makes lovely light fluffy pancakes.

I took on board all the advice and I made pancakes this morning. Used the BBC good food recipe linked to on this thread but separated the eggs. Friends, they were fantastic although I got overexcited and burnt a couple of them
