Looking for recipe mint chocolate cookies - allergies

Hi.

My son's friend had allergies to dairy egg soy gluten & wheat

He dreams about mint chocolate cookies

Can any help with a recipe I can make with him ( and teach him to make himself )

I haven't made these with gluten free digestives, but I think it would work. Swap the vanilla extract for mint.

Just check that gluten free biscuits are also egg and dairy free... I didn't think about that before I posted!
