Hi
I'm looking for some advice regarding an evening meal. Basically, I'm living with my boyfriend and his mum and she has a 1 year old but she has a takeaway for tea every night (which i dont want to do) and as my boyfriend works nights, he is waiting untill he gets to work to eat which is leading me to have super noodles every night for my tea for the past 1/2 months as i dont want to stand over the cooker every night making a big meal just for me. When i was at home i only ever used to have them maybe twice a week so i was just wondering whether you have any suggestions of simple meals i can make myself?

Tuna /chicken /poached fish with salad , quiche with new potatoes and frozen veg , why dont you take it in turns to cook family meals so everyone eats together then you could do things like spag bol , stir fry , cottage pie , roast dinners etc , jacket potatoes are quick and easy if you do them in the microwave first then finish off in the oven

Unfortunately his mum would just prefer to have a takeaway and she's in bed for half past 6 every evening because she won't leave the baby's side and then when my boyfriend starts to get ready about that time he doesn't have time to eat with me. It's basically impossible to be able to have an evening meal together but thank you for the ideas :)

boils the kettle, done.
maybe add a few veg.

Nachos, fajitas, large yorkshire pud with veg, cheesy mash and veg. Veg curry, anything you can decide on portion size or like above cook larger and eat over couple days.

Noodle soup is really quick - I chop a chicken breast, a carrot and some broccoli. Boil water in a pan, add some chicken stock/soup powder, boils chopped chicken for a couple of minutes then add carrots and boil for a couple of minutes, then add broccoli and some dry noodles. Boil until it's all cooked, add some tinned sweetcorn and it's ready to eat. It's a quick, one pan recipe, but gets plenty of veg in.

Just for a bit of variety I would try a couple of pasta dishes, maybe make a spicy arabiata sauce, or just stir through some peas, sweet corn and some tuna or ham.
A simple stir fry is quick and easy for one I would just buy a pack of ready chopped veg, sachet of sauce and straight to wok noodles. Sprinkle cashews over the top for protein.
Omelettes are speedy and one pan.
Eggs anyway actually.
Baked potato with beans, cheese, coleslaw, tuna etc.

Also ready made falafel in a pitta with salad v quick, and individual pizza made on pita.

To be honest I'm not brilliant. I was 17 when I left home and we used to eat as a family, my mum would make things like lasagne, cottage pies, chicken pies with veg, fry ups. But if i have instructions like on a box and it's not a big complicated meal I would be confident enough to have a bash at it. The only other thing though is my boyfriends mum only has 3 saucepans so whatever I make can't fill anymore than 3 pans

Packet tortellini and those microwave tub sauces take 3 mins.

Have a look at the book "one pound meals" they are all recipes for 1 person, really simple and cheap too.
I've been working through them & they are delicious

I second omelette. You can add peppers, tomatoes, onion, chorizo, cheese, ham...so even if you have it regularly you can make it a bit different. Eggs are cheap and handy to have too

We sometimes have a big heap of mixed salad leaves with rocket and have with tuna, avocado on top. Maybe a few sliced boiled eggs if your really hungry. You can do the same with halloumi, chicken etc

Easy things like fish/fish cakes with brocolli/cauliflower, new potatoes. You could chuck the brocolli in with the potatoes once they are nearly cooked

For lunches I marinade chicken, cook it and at the same time roast some chickpeas with garlic for a bit of crunch. Stir through cooked cous cous and will last in the fridge for a few days. Could make a nice dinner. I also sometimes add peppers and red onions pan fired in a bit of soy
