Cherry tomatoes and sourdough ideas

I have cherry tomatoes and sourdough bread. Looking for a lunchbox recipe. We had caprese salad already this week so trying to think beyond mozzarella. Thought about roasting the tomatoes but don't know what with. We like/eat most things.

To be honest I'd probably slow roast them and serve on toasted sourdough with lashings of balsamic, cracked black pepper and rock salt!

I slow roast cherry tomatoes at about 140c for 4-5 hours.Lay in baking tin, a little garlic or avocado or basil oil, salt, pepper, tiny bit os sugar and balsamic and a couple of bay leaves. Toss around and in the i en. Delicious

I would mash together garden peas with a little salt, pepper, olive oil and mint and spread it on then top with slow roast tomatoes

Roast the tomatoes with fresh rosemary, sea salt & freshly cracked pepper. Slice bread thinly; Rub bread with a clove of garlic and drizzle with olive oil, then grill on a grill pan until toasted. Tadaaa - crostini! (You can add ricotta or other cheese if you eat dairy)
