Holiday (veggie) food

We're self catering in the US in a few weeks, likely to be out a lot in the day. We may be taking packed lunch out with us.

Any suggestions on quick and easy meals when we get in? Or lunches that are not just sandwiches?

Added complication is that I've stopped eating meat (the rest are carnivores) and have still not established a good list of basic meals.

Any ideas would be great!

Cous cous salads
Falafel and hummous
Pasta dishes
Eggs/avocado/mushrooms/cheese on toasr

Veg fajitas, spicy veg burgers, sweet potato fries, baked potato with nice coleslaw or cheese

We holidays in Orlando last year and were surprised at the lack of veggie options. A lot of traditionally veggie dishes would have bacon added.

Self catering will be easier, although if you are carrying packed lunches around in high temperatures I can't imagine that they will be very nice.

What part of the US? Could you do a large breakfast (cereal, fruit, eggs plus bacon for non veggies), take snacks and then dinner?

Thanks - some good ideas!
I would definitely go for the big breakfast option, but my children need to eat every few hours, so we'll end up with several food stops.

We have a cool bag, so hoping that will stop any food becoming too grim...

Big fritata, have hot for dinner then take leftovers out with you next day.

The supermarkets there stock a really wide range of veggie meat alternatives (similar to Quorn) so you might want to try some of those

What part of the US are you going to? If you are going to theme parks they don't allow cool boxes in, but you will be fine with cool bags.
