Freeze it and use it for a small shepherds pie.

Lumberjack pie?
Sounds interesting

It might sound interesting but it ain't!

Grin

Nevertheless my kids absolutely love it, and still as young adults, beg me to make it.

It harps back to my very skint, single mother of two young children days. Not very healthy granted and no doubt the quinoa and mung bean set on here will be having fits of apoplexy at the recipe!

  1. Fry a finely diced onion and add a sliced up tin or two of chopped ham and pork or similar (luncheon meat/spam basically). A veggie stock cube (optional) can also be added for a bit of extra flavour.

Spread the meaty onion mix in the bottom of an ovenproof dish and pour over a tin or two of baked beans.

Spread mashed potato on top, dot with butter and grate cheese over the top.

Bake in oven for 20-30 minutes until cheesy potato topping is brown and bean juice is bubbling through.

Fontella,
That sounds lovely! The sort of thing
I can make a big tray of and take into work for cheap but tasty lunches. Thanks for sharing smile]
