Suggestions for DS food tech recipe.

DS has to make a picnic recipe for food tech on Tuesday, he's told his teacher he'll do pasta salad because he couldn't think of anything else, he made it in class a few weeks ago and really didn't like it, we ended up with a tub of congealed. sweaty pasta at the end of the day.
I've said he's better off making something new (because that's the point of food studies surely)
So does anyone have any suggestions? He's got the basics of cooking down at home but isn't overly confident.

The criteria is,

Portable for picnics
No raw meat products to be brought into school.
He's got 1hr to prep and cook
Can be sweet or savoury.

Couscous? Cumin, lemon juice, garlic, chopped coriander, chipped mint, baby toms and cumber? Lovely and summery.

Picnic loaf? One of the round loaves of bread hollowed and filled with different layers. Roasted peppers, cooked meat, houmous or similar. I have a mind blank of what I put in them.

chorizo, roasted red pepper, onion, and courgette puff pastry tart or fritata?
Is there a particular skill he would like to learn or demonstrate?

I was going to say picnic loaf too, easy and absolutely delicious.
I like to start with halloumi, then two or three different meats, top with olives/capers/pickles and lastly thinly sliced tomato.

Potato salad? Lots of variations. I like mayo, creme fraiche, course grain mustard and chives
