Inspiration Required

So on Sunday we're off to the SiL who lives about 2 hours away. Need to make a pudding to take and the weather says it's going to be hot. I wanted to make a chilled cheesecake but it might not make it in one piece.
Does anyone have any other ideas of anything I could make? my mind has gone blank. (not sure whether I could finish anything off at SiL)
