What do you do with chicken breast?

I always have chicken fajita or curries. I always fancy a casserole but chicken is tasteless in my opinion and i would rather have lamb or beef.

So what do you do with a chicken breast?

Tonight we're having chicken and chorizo risotto. Two nights ago we had chicken cacciatore and pasta. Both recipes very easy and tasty. My dc love them both, especially with cheese on top!

I am afraid I rarely use them. I tend to use chicken thighs as feel they have more flavour, are cheaper and I prefer the texture. When I do buy them, it's to bash flat and use to make home made chicken kievs Smile

We had them last night marinated in oil, lemon juice and rosemary with some garlic and tiny bit of chilli. Chopped them in 3 and did on BBQ.

They were really nice.

Also use in stir fries or bash flat and grill after marinating.

But normally I buy thigh if going to make a casserole or do a chorizo and chicken tray bake.

You have to add fat to them as they are so lean they can be tasteless.

So:

Chicken and bacon salad
Chicken satay
Chicken stuffed with cheese and mustard
Chicken marinated in olive oil, basil, garlic, lemon

Bash them out, put some garlic and herb cream cheese in the middle, then fold over, wrap in bacon and pop in the oven for half an hour.

Or Hunters Chicken - topped with a BBQ sauce, bacon and cheese

Thai chicken soup - a bit of a faff but delicious.

Fajitas and curries are my go-to things to do with chicken too.

Chop into chunks and marinate in lemon juice, garlic, parsley, oregano and any other herb you fancy with a bit of olive oil. Thread onto skewers and BBQ, bake in the oven or grill.

Some fab ideas thank you, rissotto is something I forgot about and I haven't been brave with a lemony chicken yet but I might try that for next week.

stir fries
rubbed with Cajun spice and cooked in oven
chicken satay
chicken & veg soup
We eat a lot of chicken breast! No-one apart from me likes chicken thigh meat here.

Chicken chopped into pieces and cooked in frying pan with peppers mushrooms and beansprouts . Then wack in some fresh egg noodles and a chow mein sauce . Quick easy and kids love it

I prefer thighs but there's a lovely Fay Ripley recipe for thighs which works well with chicken breasts too. You basically brown the breasts, then put them back into the pan with some stock and seasoning. Add thinly sliced potatoes (v thin) then cover the pan and poach till cooked (about 40 mins?). Add some sliced broccoli (or peas, or whatever) for the last five mins, then reduce the stock a bit with some mustard and creme fraiche. It keeps the chicken really moist and is a nice, easy meal.

Cut a pocket in it, shove in some garlic and butter or cream cheese or chorizo. Wrap in bacon and roast. Mmm.

Put in a shallow dish with cream, chorizo, mushrooms, or leeks, or garlic and peas. Roast, stir, serve. Mmm. And with a splash of white wine.

MMmm. MMmm. I might batter it out and breadcrumb and fry it if I can be bothered.

Tamale pie is about the only thing I use chicken breast for or hunters chicken.

Chicken breast with lemon and garlic, asparagus, green beans and vine tomatoes, wrapped as individual meal parcels in foil and stuck in the oven for 20 minutes, serve with sautéed potatoes. Quick and perfect as a summery light dinner.

In a marinade like I suggested above I try to use fresh herbs. If it's easier though you could use frozen, they are really good too. I sometimes use dried in things like casseroles or a bolgnaise sauce which is going to be cooked out for longer. The only exception i make is oregano when dried seems as good as fresh.

I need to get more herbs growing then.

Chorizo which lots of you mention is a firm fav with everyone apart from me as I'm not a sausage fan. Is there a kind of chorizo that doesn't have gristle or lumps of fat in?

Sobrasada is a very smooth chorizo. It's like a paste, dissolves into a sauce really.

I'm having this tonight! A bed of leeks, with slashed chicken breasts nestled in, and a garlic cream poured over. Baked alongside hassleback potatoes. Mmm.

Hairy Biker's Spanish Style Chicken I know it says chicken thighs, but I always use chicken breast.
