Increasing veg

So me and the family have decided to give up all chicks, crisps, sweets and ice cream for lent. Coinciding with this I want to up their fruit and veg.
Tonight we are having lasagne (mince beef, onions, peppers, mushrooms, celery and cheese) and salad (lettuce, tomatoes, cucumber, peppers, red onion and sweet corn). I need ideas as to any other fruit/veg that could be added to meals like this please?

Grated carrots and courgettes are great added to mince for lasagne/Bolognese/shepherds pie etc. Veg sticks with humus. Making s massive fruit salad goes down well here, keeps for a few days and easier to eat lots of fruit than just having an apple

Veggie skewers, courgette, cherry tomatoes, button mushrooms, peppers, red onions threaded up and cooked under the grill, add chicken and or sausage pieces if you want.
Can you make veggies the 'star of the show' rather than a side? Stuffed mushrooms or peppers, veggies curry, vegetable stir fry with cashews, homemade veggie burgers, five bean chilli?
Other sides sweet potato wedges/mash, corn on the cob, if you have a spiraliser courgetti or a 50:50 courgetti spaghetti mix, crudités with a salsa or guacamole dip (double whammy veg there), ratatouille, homemade coleslaw.
Easy to cram tons of veg into soups. Fruit added to porridge/cereals at brekkie. Replace your ice cream with crumbles (tinned peach and pineapple goes down really well here).

Soups, aaaall the way.
I jave.to do a fair amount of hidden veg here.
My 'Tomato' soup has been known to have up to eight different veggies in Grin Same with tomatoey sauce for pasta/lasagne etc.

Potato/fish cakes with cabbage and onion
Vegetable spring rolls, grated cabbage, carrot, parsnip and leek.
Tempura veggies

sorry, just saw you ask for veg suggestions, for adding, no just meal ideas.

I any kind of root veg to soups and sauces, usually grated and cooked down a lot!
carrot,.swede, turnip, sweet potato, onion, celery, peppers, garlic, leeks.
Mine won't really do greens or mushrooms. Although, occasionally Pea and Ham soup is accepted

don't forget that beans and pulses contribute towards one (but only one, regardless of how much you eat) of your veg portions - so things like hummus and roasted chickpeas are great - and you can swap some of the meat in things like bolognaise for lentils

For dessert how about baked or stewed apples with yoghurt or custard?

Thank you so much! You have given me loads of fresh ideas Grin I have bought different dried beans and pulses- to be honest I was a little Hmm as to what to do with them, although the good intentions are there.

I chuck a handful of lentils in my spag bol/cottage pie mix to bulk it out a bit.
Can't get hummus in mine :( And they have tinned baked beans in chilli instead of kidney beans.
Pork ribs with lentil soup goes down well also.
