A friend (and two dc) for lunch tomorrow! What can I make out of my fridge??

There will be two adults, two 4 year olds and two 20 month olds, everyone eats pretty much everything! Here's the list:-
Halloumi
Feta
Cheddar
2 red peppers
1 avocado
Mixed cherry tomatoes
Red onions
Streaky bacon
Houmous
Creme fraiche
2 romaine lettuces
Potatoes - normal & sweet
Full fat Greek yoghurt

In larder - all normal stuff

Any ideas?? Smile

Ooh a delicious avocado bacon and feta salad (with peppers, red onions and tomatoes and roast sweet potatoes) Simple but delicious. Ask the other people to bring a nice loaf of bread?

Or a frittata/tortilla assuming you have eggs with some guacamole and a salsa

Or a veg loaded and bacon macaroni cheese (using creme fraiche and cheddar). If you've not much milk you can even use yoghurt and it works.

Do you have any pulses in store cupboard? I want you to make a bean chilli now with the peppers and sweet potato along with guacamole and salsa but that's going rather off list!

That all sounds delicious!! I've baked a loaf of bead today, so can use that tomorrow!! And yes I have all kinds of beans and pulses, in fact some nice red quinoa too!

I would just go for a massively lovely loaded salad (peppers, avocado, tomatoes, red onion, lettuce) and serve with yummy accompaniments (either fried halumi and/or cubes of feta, and little dishes of hummus and tzatziki (grate a little cucumber/garlic/mint into natural yog with some salt and pepper) and some nice bread (you have homemade so that's ideal!). If you want more toppings you could also fry some bacon up nice and crisp to crumble over. Simple and delicious!

Alternatively, if you have eggs you have makings of a variety of gorgeous quiche/fritata type concoctions! I would do cheddar, bacon and red onion and/or feta, tomato, roasted peppers and red onion. Fry the onions/bacon/peppers (whichever you chose) over first, and then make a quiche mix using yog/creme fraiche, plenty of eggs and loads of seasoning.
