Vegetarian Christmas food

both me and DS have gone vegetarian this year. (I slip a little but he is very rigid with it)

So - I think we are hosting the xmas dinner this year - most of the guests will be chowing down on turkey. I do need some ideas though for something to prepare for us two (and perhaps others who decide they want the veggie option )

DS doesn't like mushrooms - so they are out.

All I can think of are the old classic NutRoasts so far.

any ideas please ?

I did an onion tarte tatin for a veggie friend and ended up eating half of it myself (there was loads!). Beetroot works well too.

Well we both like onions - so that's a good option.

I suppose anything 'pie' like will be good as it will go well with the vegetables prepared for the whole meal.

I saw a recipe on food food for a Camembert pie that looked amazing if Camembert is veggie

Basically a whole Camembert baked in pastry that looked amazing!

I'm vegan and did a sort-of vegan Wellington last year - a glorious concoction of nuts, lentils, mushrooms (can leave out), onions and celery all wrapped up in a puff pastry crust.

I haven't really cooked much food in the veggie line so far - other than dhal and bean chillis - so do need to increase my repertoire.

I generally don't replace the meat as I am the only veggie in the house but i do make huge amounts of smashed potatoes with rosemary, loads of Yorkshire puddings, stuffing and lovely veg with plenty of gravy. If I was feeding more then I would definitely do a pie. I also recommend a cheese board....

If you want to step away from the beans, pasta is your friend.
Loads of veggie/vegan recipes, easy and quick to cook.
A favourite of mine in winter is to cook short pasta, steam broccoli (cut into small florets)over the pasta water for a few minutes, then shake it into a pan with oil, chili and crushed garlic, allow the garlic to colour a little then stir the sauce through the drained pasta. Serve with grated Parmesan or pecorino cheese.
Can use pretty much any green veg in that recipe.

I'm not keen on most nut roasts I've had in pubs or shop bought but my mum kaes an amazing on at home I think it's Delia Smith but I can't find it anywhere online, if I do I'll update thread, we had it most weeks when I was at home and for Christmas sometimes added cranberries into the middle layer. I find adding a pastry to a Sunday roast odd but lots of people do, I'm happy with extra roast potatoes and lots of cheese sauce!

I made Anna Jones' Goodwill Pie last year. It was wonderful. Great with all the christmas trimmings and fantastic cold with leftovers.

It is a bit faffy so I did the fillings the day before.

Not pasta - as a veggie I still want all the potatoes, stuffing etc, just not the meat. I hate it when restaurants do Christmas/roast dinners for the carnivores, and pasta or risotto or something for veggies.

Stuffed butternut squash is nice and goes well with all the usual trimmings. Or pie - absolutely.

Agree with Remus. When I ate meat the turkey was my least favourite part of Christmas dinner, I'm happy enough just having a plate of roast potatoes, mash, Yorkshire puddings, stuffing, roast parsnips, carrots, brussel sprouts, gravy etc. That seems to baffle most meat eaters, even though most people I know can take or leave turkey!

Lots of different vegetables. There really is no need for a meat substitution if you provide plenty of veg choice. I've had a vegetarian diet for almost 30 years and 'we' really do enjoy a good roast without the meat (as long as the gravy is vegetarian too).

I've done strata, which is a sort of savoury bread pudding, vegetable Wellington (usually with mushrooms, admittedly), spiced potato koftas and spinach and feta pie before.

Not exactly gourmet, but I really love a good cauliflower (or broccoli) cheese with a roast dinner. They go well together and the meat eaters can have some too. I like loads of sauce so I can mop it up with my roasties
