Anyone have suggestions for (preferably low carb quick) breakfast. Scrambled eggs are my staple but I'm getting bored with them. I eat most things and doesn't have to be a traditional breakfast....I could happily eat cold pizza for breakfast!

Baked egg muffins. Mix eggs, cheese, and ham together (cooked onions and mushrooms/tomatoes are also nice) and put into silicon muffin trays. Bake till set and scoff. They last a good 3 days in the fridge and take around a minute to microwave.

If I'm low carbing I often have an avocado for breakfast.

I can't think beyond eggs, Porridge or weetabix. Toast is OK. My DH makes a savoury Porridge. I would love to see what others suggest.

courgette, cherry tomatoes, mushrooms, (sometimes spinach) and chorizo or chicken (can use precooked for added speed). Dry fried in a decent one stick saucepan for 5 mins with a small bit of soy if using chicken and not chorizo.

Atm scrambled egg in wholemeal wrap is totally the favorite. It is still with scrambled egg and not low carb but low calorie and filling though.

I batch freeze shakshuka sauce in individual portions, take it out the night before or do a quick defrost in the microwave, pour into oven proof dish and crack in one or two eggs and slide in a hot oven till eggs are just set. Alternatively just fry the eggs and smother in the shakshuka sauce (wipe away excess oil and use residual heat to warm sauce). Top heavily with parsley and sesame seeds. Sometimes I add an avocado to make it a more substantial brunch/lunch type dish or put in on a toasted whole wheat pita and some spinach, top it with some tahini and call it a light dinner.

I also like miso soup in the morning (quite traditional in Japan) with some fresh tofu, sometimes drop in a soft boiled egg for added protein.

I've just googled shakshuka hadn't heard of it but looks delicious. Loving the other ideas too - I do still like eggs but they need jazzed up a bit from my norm!

Half an avocado with fried bacon bits and chilli flakes.

Personally when I'm low carving I'm happy to have "scrambled" bacon bits and mushrooms for breakfast. In fact I'm a mushroom fiend so always happy to have that.

www.bbcgoodfood.com/recipes/1649636/baked-eggs-with-spinach-and-tomato These baked eggs are good too.

Boiled egg sprinkled with dukkah and a small knob of butter.

Hhhmmmm- I may start low carb again Grin

How about poached salmon with roast or grilled tomatoes and mushrooms?
Greek yogurt with seeds and chopped nuts
Chia seed porridge
Frittata - you could make it the night before and then eat cold the next day or reheat - and it would last you a few days
Egg, spinach and mushroom "muffins" - again you make a batch of them and then reheat or just grab and go
