any suggestions for what to make with puy and/or green lentils?

I've never cooked with them before so I'm not really sure what to do.

Maybe some kind of warm salad? Or what else could I do?

Oooh, yum

1 salad, with feta and halved cherry tomatoes

2 as a bed for poached salmon,

3 with garlic and boiled spinach as a base for a poached egg

4 with garlic, onion as a veg to go with anything

I hadn't thought of using them as a side like that. So are they easy enough to cook without turning to mush? I've only ever cooked red/moong lentils that go mushy for dahl and soup and stuff.

Sea bass fillet baked with orange juice, mustard and honey. Put it on a bed of puy lentils with watercress on side and add a drizzle more of the sauce
My favourite meal right now!

Puy lentils hold their shape when cooked (as long as you don't over do it!)

I like to do puy lentils with dressing of olive oil and lemon juice, chuck a bit of finely chopped garlic and onion, plus a bit of black pepper and salt. If I've got it some roast butternut squash and some goats cheese combine well...

They work really well as a replacement for meat in mince dishes, they won't fool anyone into thinking they are meat but are delicious, we're not vegetarian either, just like something different occasionally.

This vegetarian moussaka uses out lentils and is totally delicious. It's actually from a Mary Berry book from before she was so famous!

This is delicious as a side salad or even to eat on its own....

Chop up some red onion, sun dried tomatoes and plenty of fresh coriander
Soft chilli from a jar (to taste)
Add some cubes of feta ( I like the ones in a jar of olive oil with herbs for convenience and flavour and they hold their shape )
Olive oil ( better still use some oil from tomatoes or feta jar)
Mix together gently.
Keeps in fridge for several days in airtight container so you can dig in, or make it in advance for a meal...it's better after a few hours to allow flavours to develop.

Green /puy lentils need about 20 mins just boil with water, strain in the sieve and drain well. Wash under tap with cold water...

I love the tinned lentils you buy in France. You can't easily get them here.
The tinned green lentils available in our supermarkets aren't nearly so good. It's worth boiling your own and very easy to do.

Serve with beetroot, goats cheese and rocket
Make a stew with sausages
Mix with feta as a puff pastry pie filling
Roasted veg & a tart soft cheese

I buy the merchant gourmet ones for camping Stately, have you tried the ones with Sundried tomato? We all really hated them, really strong and slightly odd flavour. Bit disappointing when you are starving and your food stash is running low because you are about to go home Sad.

I love them as the base for a warm salad with goats cheese and crispy bacon crumbled in. Rocket too, and walnuts if you fancy.

The vegetarian bolognese on Eat well for less recently is lovely-I did it with green lentils (Google should find it straight away)

The Italians do a nice version with a holy trinity (celery, onion, carrot) with added pancetta, lemon, garlic, mint, parsley and wine.

So good- I may cook it for supper!
