inspire me with chicken

Cos I am sick of the same thing over and over. Currently have 2 chicken breasts defrosting and need to make something my fussy dh will eat.

Any ideas? Nothing too expensive!

Hot chicken melt: in baguette with bacon, melted cheese and barbecue sauce.
Hunters chicken: slit breasts, put cheese inside, wrap with bacon, cook in oven, finish with barbecue sauce.
Kiev, cordon bleu, poached, pan fried with onion and mushrooms
pot pie: cooked with onions and carrots in a little gravy topped with pastry.
