best chocolate for melting down

Hi, i wonder if any of you have experience in melting down chocolate and using it to make homemade chocolates. The kind where you spread it over a tray and sprinkle with other stuff then break it up into shards.

I want to do it for Xmas gifts but I've tasted some before where either the choc just wasn't that nice or it wasn't made very well.

Which chocolate is best? Any thoughts?

You need to use at least 70 per cent cocoa solids. I like Green & Blacks.
