Sorry In advance this is a bit dull Blush. I'm in a bit of a vegetable rut and seem to buy the same ones every week. Please give me ideas of new veg to do, we typically have e.g. Fish fillet/chicken breast + veg. Both doing 5:2 so some healthy options welcome! We eat a lot of broccoli, carrots and courgettes at the moment. Sometimes roast root veg at the weekend.

peppers onions courgette cherry tomatoes and aubugine roasted in olive oil and herbs

Cabbage and leeks sautéed in butter with lots of black pepper

Roasted butternut squash and sweet potato

Baked leeks

Green beans, onion and red pepper stir fry with Cajun spice

Sorry hit post! These are things I do to deviate from carrots, broccoli, cauliflower and peas which are popular round here!

Fry a little garlic gently, add blanched broccoli florets and serve with a squeeze of lemon juice.

Peel your carrot, and then keep peeling, and mix the peels with a little salt and olive oil - just a little, the carrots will give a bit of liquid due to salt.

Also stir fry broccoli with a little garlic, red chilli and a splash of soy sauce. Nice with a little rice/chicken/fish

Homemade baba ganoush as a dip for veg like carrots, cucumber etc? Pierce skin of the aubergines, coat with one cal oil spray and roast in oven. When the aubergines are cooked until soft all the way through, remove from oven and and scoop out the flesh, mash it and season and add lemon juice to taste. If you have enough calories to use up, add a bit of tahini.

Great thank you! Adding to my online shop right now. DH hates peppers and aubergine but otherwise all good.
