Hit me with your best Thai red curry recipes please

I've tried a few and it never seems to turn out that well. I need a good recipe to add to my repertoire please.

I like the simple recipe from the hairy bikers first diet book -the white one

It's super easy and doesn't take long so is ideal for a week night

Uses paste so not one of you're looking to do it from scratch

To start with you need Thai basil - but it's always better from the local Thai takeaway and homemade is always second best even when I've made a fresh paste.

Scoop the solid coconut milk from the top of a tin and heat in a frying pan or wok until it turns to oil. Add red curry paste (Use a good Thai made paste) - 20-50g depending on how hot you like it and stir to release fragrance - then add chicken thigh or breast in chunks and stir till meat turns white. Add rest of coconut milk and leave to simmer. After 5 mins or so add a tin of bamboo shoots and heat through. At last minute stir in a tablespoon of fish sauce, some brown sugar to taste and a shredded kaffir lime leaf. (This makes a huge difference - I buy fresh in supermarket and stash in freezer). Whole thing takes same length of time as jasmine rice, so 15 mins start to finish. Serve with sprigs of Thai or normal basil. Enjoy!

My favourite is a duck and pineapple one - I usually hate meat and fruit but it really really works
