Does anyone meal plan lunches? Share your lunch time meal plans with me please!

I want to start meal planning lunches, I already do dinners. I always end up eating a sandwich for lunch and I am bored. I think meal planning lunches may be the answer (hopefully!). If anyone does this could you please share your lunch meal plans on this thread so I can steal your ideas Smile thank you

I just make an extra portion of dinner and have the left overs!

Monday: Minestrone soup and a hard boiled egg
Tuesday: Prawn and edemame rice salad
Wednesday: Butternut squash soup, celery sticks with spready cheese in.
Thursday: Spinach and feta salad, with capers and jarred artichokes
Friday: Tinned sardines on toast.

I turn leftovers into soup all the time, and freeze in individual portions. I aim to eat tinned fish with bones in once a week for the calcium. I keep my carbs low-ish so I'll tend not to have a bread roll with my soup, but that's an option.

Chicken salad- Monday and Tuesday's as I have left over from dinner on Sunday. That's my plan. Rest of the week have either left overs or tuna or prawn salads.

I have just started doing this having meal planned for dinner on and off for years. (I go through periods of being super organised and then I lose the motivation and I go back to nipping into Sainsburys on an almost daily basis Blush)

I am lunch planning for kids packed lunches though - not for myself so this might not be what you are looking for. This week it looks like this...

MON - Ham, cheese, sweetcorn and Philly tortilla wraps with grapes and yoghurt.
TUE - Sandwiches on seeded granary (turkey, Brie & cranberry for DS and turkey & cheese for DDs) with salad (peppers, cucumber & small tomatoes) and jelly.
WED - Vegetable couscous with cooked chicken (DS) or sliced cocktail sausages (DDs) and extra raw peppers, cucumber & baby tomatoes mixed in.
THUR - Crackers, cheese & ham with melon & kiwi and jelly.
FRI - Cranberry & White chocolate scones with melon & kiwi and yoghurt.

I have to meal plan lunches or they end up as chips/McDonald's/greggs

This week has been

Monday- avocado, salad and smoked salmon wrap

Tuesday- mushroom pate on mini melba toasts

Wednesday- beef and mustard sandwich

Thursday- leftover wild rice and veg stir fry

Friday- smoked salmon and prawn cocktail

Clearly I need to lay off the carbs Blush

Nope, but when we're at home in the day time (holidays and weekends) we tend to have:

sarnies
cheese and biscuits
mushrooms on toast
tomato soup (Heinz) and a cheese toastie
bowl of salad and a pitta bread
eggs on toast
a Staffordshire oatcake with mushrooms and an egg
Philli cheese, chilli sauce, coriander, carrot and cucumber sticks and tortilla chips
Omelette
Qasadillas or pancakes if I'm feeling particularly goddess-esque

I use the my little lunchbox blog as an inspiration but I only need to do 2 days of lunches the other days I don't work I just eat the 18 month olds leftovers

Yup sure do cos I can only tolerate a sandwich once or twice a week

So vary it up with all manner of soups
Leftovers from the previous nights tea
Quinoa that's warm with salmon and veg
Sushi
Chicken/tuna/feta salad
Pitta pizzas
Cous cous some form of protein and salad
Quiche
Cheese and crackers
Cheese on toast
Pasta and sauce
Poached or scrambled eggs on toast
Make a 2 egg omelette and use that as a 'wrap' and fill with whatever takes my fancy
If I'm at home And have cooking facilities roasted veg and tuna steak

I have to plan as I'm doing slimming world and I would just stuff myself with crap otherwise. This week is:

Mon: BLT sandwich
Tue: Ham, mushroom and tomato omelette with salad
Wed: Chicken salad sandwich
Thur: Bacon, egg and tomato on toast
Fri: Fruit salad with natural yoghurt
Sat: Ham salad
Sun: Bacon, egg, beans, mushrooms, grilled tomato (late breakfast/early dinner)
