How long can I prepare potatos in advance? Also, soup question

Ok, we have 8 people coming for a roast dinner tomorrow night. I want to prepare the veg as early as possible. If I peel all the potatos and chop them ready to be boiled before roasting, how can i keep them fresh for the next say, 8 hours? Is it possible or will I have to do them nearer to the time I'm cooking them? Also, am making a big pot of soup. Can I leave this on the hob once it's cooked all day or will I need to refridgerate it and then reheat later.? TIA!

Peel pots and chop them into size, then put in a pan and ensure they are entirely covered with water.

I think you can keep them out like this for several days, but if you have central heating etc I would say put them in the fridge.

NB change water at least once every 24 hours - v important

I watched Godess Anthea Turner last night saying it was ok to roast the potatoes and reheat them in the oven for 10 mins THE NEXT DAY. Well, really. I'm going to give it a go!
