I need a new chicken casserole

DD turned her nose up at the one I normally make today and tbh I'm getting a bit fed up with it too, does anyone have a nice recipe for a chicken casseroley type thing?

flour and fry off your chicken pieces and set aside. fry onion, garlic, then bacon and mushrooms. add a good slug of red wine and a bay leaf and some bouquet garni, stick your chicken back in and whack in the oven for as long as you can (at least an hour and a half) at 180.
it's basically boeuf bourgignon with chicken. coq au vin in our house.

That sounds about the same as the one I already do, only I use shallots instead of onions and white instead of red wine...

I do one on the hob with onions, chicken thighs, tomatoes , carrots root veg and herbs.

Do the usual , fry onions and carrots and chosen root veg and or tats gently until soft and lightly brown, remove and fry chicken until brown outside, add back in all onions etc , add stock ,white wine , canned chop tomatoes bring to boil and simmer for an hr or more.

was just about to say pretty much exactly what melsy said - add a tin of chopped toms to what you already do basically, perhaps some peppers, courgettes, sometimes I put dried chillies in to pep it up a bit, or paprika for younger ones

i do that too, moosma. it just depends what dregs of wine i have floating around.

or what about making it more tagine/morrocan style with lemons and various spices : cinnamon , nutmeg etc?
