low sugar cake recipe? anyone got one?

does anyone know of a health-ish cake recipie that doesnt require loads of sugar.


i could substitue for something like splenda but dont want my kids having that really.

Many cakes tolerate reducing the amount of sugar quite a lot. It's worth trying your usual recipes with, say, 2/3 the amount, and experimenting with further bakings to seee how much rediction each recipe can take. You do need to use some, though, for the structure, not just the flavour. You can also add sweet ingredients, likje grated carrot or sweet potato. Vanilla enhaces the sweetness of any cake.

I think Fruisana (?) is sweeter than sugar so you can use much less. Never got around to tryingto bake with it, though.

My ds can't have refined sugars but he can tolerate fructose ones and these tend to be sweeter so you use less. The only problem I've found is they are slightly heavier than when i make cakes using normal sugar. A chef freind of mine suggested yesterday that i use a pinch of baking powder next time but i haven't tried this yet. I made him a honey cake some time ago that someone off the SN board gave me a recipe for - if I can find the recipe I'll post it up as tyhe cake was yummy and no sugar or artificial sweeteners needed.

Also made scones with ds during 1/2 term with honey and raisins added for sweetness and they went down a treat too.
