We are eating a lot of frittata at the moment. Good way to use up cooked potatoes and odd bits of veg, quick, healthy and DD loves it!

Enchiladas
Jacket pots
Risotto. (I made an uber batch a while back and froze it before adding all of the liquid. Now it's pretty much a preprepared ready meal and takes less than 10 min- just throw in additional veg and some protein!)
Curries

I'm a big fan of anything you can make in one pan. So sausage & bean stew, lentil soup, sweet potato & black bean chilli etc. Saves on washing up Wink

Usually always make...
Sweet n tangy curry
Tuna pasta bake
Something with noodles (stir fry, Thai spiced mince etc)
Something with potato (chips, mash, croquettes etc)

Always try to make sure I have at least one meal with rice, pasta and potato so it's not all the same.

Spanish omelette
Jacket potato with tuna, cheese and veg sticks or baked beans and cheese
Pasta or gnocci with tomato sauce, sometimes with sliced sausages in the sauce
Savoury pancakes, with cheese, spring onions and sweet corn
Pastry things, like a cheese and onion flan, or a family size sausage roll
Chicken loaf
Chopped chicken breast in a marinade (lemon juice, soy sauce, sugar and crushed garlic) , either thread onto skewers and grill for kebabs or shallow fry and serve in wraps with spring onion, salad
Chicken and tomato rice
Sweet chicken curry (sweetness comes from apple juice)

The kids like all these and most, except for pastry that I only do at weekends, quick to make.
