He will need a rolling mat and special rice. I went to an evening course once as a corporate thing. Im sure you can buy starter kits.

Yes, sushi rice. And it's mixed with some kind of vinegar to give it the sushi taste and stickiness.

You can get a kit in Sainsburys, in the world foods section.

A bamboo mat, nori sheets, sushi rice, mirin, and wasabi can all be bought in Sainsburys or Waitros (or if you don't shop with Ocado already, you could do an order and use one of their discount codes).

Rather than doing raw fish to start with, we like nori rolls with cucumber, avocado, cold roast chicken, tinned tuna, duck from one of those crispy duck packs (lovely with plum sauce in), or shredded carrot.

A rice cooker does make doing the rice easier if you were thinking of spending a bit more

Stay away from sainsburys, shudder. Horrific quality and not really even close to the real thing. Go to an Asian supermarket, they are EVERYWHERE. You will need Nori (seaweed sheets), Sushi rice AND sushi vinegar (the sushi rice is basically just Japanese rice, you need to add the vinegar to make it Sushi, unless Sainsburys have already added the vinegar, massive shudder!!), bamboo mat for rolling, a paper fan of some sort, wasabi, soy sauce (kikoman! Preferably import). Then whatever fillings you wish. CMOTDibbler above gave some good suggestions for foreigner friendly sushi fillings. They would be quite tasty! I would be afraid of the freshness of raw fish here.
