How do I make flapjacks?

Everybody loves flapjacks and I think making them with whole oats ? sometimes called ?Jumbo? oats ? adds an extra dimension.


Makes 10

Ingredients
4 oz (110 g) light brown soft sugar


6 oz (175 g) butter


1 dessertspoon golden syrup


6 oz (175 g) porridge oats


a few drops of almond essence


Pre-heat the oven to gas mark 2, 300°F (150°C).

You will also need a 7½ inch (19 cm) square baking tin, 1½ inches (4 cm) deep, lightly greased.


To start, place the sugar, butter and golden syrup together in a medium saucepan and heat until the butter has melted. Then remove the saucepan from the heat and stir in the porridge oats and a few drops of almond essence.

Now, press the mixture out over the base of the prepared tin, and bake in the centre of the oven for 40 minutes. Allow to cool in the tin for 10 minutes before cutting into oblong bars. Leave until cold before removing the flapjacks from the tin, then store in an airtight container.

Nooooo, you want this recipe. I've done extensive research recently...

250g porridge oats (the cheap type, not large ones),
150g Butter,
2 generous table spoons Golden Syrup
half a tin condensed milk,
100g demerera sugar

baking tin, no bigger than about 18cm x 28cm

Method:

  1. Preheat the oven to 160 degrees c
  2. Line the baking tin with baking parchment.
  3. Melt the butter in a large saucepan over a medium heat and add the sugar and syrup. Keep gently heating and stirring until all is melted and mixed. If it starts to boil take it off the heat!
  4. Add the condensed milk and mix. Bring to the boil for about a minute.
  5. Remove from the heat and gradually add the oats, folding them in. All the oats should be coated, and the mixture quite dense, but still sticky. Don't add so many oats that the mixture becomes dry.
  6. Pour the mixture into the tins and spread about so that it lines the tin to a depth of 2-3cm. Don't squash the mixture in, just spread it evenly.
  7. Bake in the oven for about 15mins. You should take them out when they just start to go brown round the edges, don't leave longer than this. If they're still squidgy in the middle that's fine, they set on cooking.

Well ok you can't beat a bit of condensed milk (did you know it comes in tubes you can just suck it out of now?) but I'll wager my recipe is better than Delia's (nowhere near enough syrup).

Preheat over to 190 degrees (170 fan ovens).
125g butter
125g brown sugar
5tbsp golden syrup
Melt together in a pan. Stir in:
225g porridge oats
1teasp mixed spice or ginger (optional)
Handful of dried fruit (optional but chopped cherry Humzingers are the best)

Line an 8"x8" or 8" diam springform baking tin with non-stick paper and spread the mixture in.
Bake 20mins, cool for 15mins then score slices.
The gauntlet has been thrown!

Bumping this oldie, as I've just made SoupDragon's flapjacks, with a wee layer of mincemeat through the middle, as an experimental Christmas treat. Wonder if it's too late to sample them now?

Must try soupdragon's recipe. The condensed milk sounds an amazing addition.

My own recipe is very simple:
2 parts oats
1 part butter (melted and allowed to cool slightly)
1 part Demerara sugar.

Mix and bake for around 15 mins.
