Salmon with a pesto herb crust

Hi
Any ideas on how to create this? I'm ure I've seen it somewhere but can't seem to find the recipe, BTW will prob use ready made pesto.

surely something along the lines of:

  1. Whizz up a few slices of stale-ish bread in blender to make breadcrumbs (any leftover can be frozen and used frozen from the freezer in future).
  2. Mix breadcrumbs (about 3 tablespoons per person) with pesto (1 tablespoon per person)
  3. Grease a foil-lined baking dish with butter. Lay salmon steaks on it, skin-side down.
  4. Spoon pesto-breadcrumb mixture on top of salmon, and press down with fingers to compact it onto the fish.
  5. Bake in pre-heated oven (180C) for about 15 minutes, until fish cooked through and breadcrumb/pesto mix has gone crispy and beginning to brown. Test frequently after 15 mins as you don't want fish overdone.


I'd imagine this to be nice with some lemony green veg and maybe some new potatoes
