How do I cook and dress a whole salmon for a buffet

Does anyone know how I would cook and dress a whole salmon with prawns and crabs etc for a large pary buffet?

Or failing that know any company that does this for you in the Birmingham area?

I am presuming you don't have a salmon kettle. If not I would wrap the whole thing in oiled tin foil in which I had put a little white wine and some herbs such as dill and parsley. Make the tinfoil into a air tight parcel iyswim and bake it in the oven for around half an hour and then leave it to cool. Carfully move the salmon to the serving dish and then carefully remove the skin. cover the fish in a thin layer of mayonnaise and then decorate it with thin slices of cucumber, lemon, herbs and seafoos.

I knew someone who cooked it in their dishwasher, wrapped in foil.

Hmmm...bet it had a tinge of "Finish" in it
This was a family I did a catering job for ages ago, unfortunatley the salmon flavour had permeated the all the crockery and cutlery that had been in the diswasher and my offerings were somewhat sullied to say the least.
