whole salmon ideas

Got a half price 3.5 lb fresh salmon
Never cooked one
Shall I cut into steaks and freeze? Or fillet some?
Planning to maybe freeze and have at Xmas.
Is there a recipe I would cook now and freeze and defrost for Xmas? Or what can I do to it if i freeze it whole then defrost it.
Its gutted and scaled.

You can freeze it whole and then defrost. I often do a whole salmon when people come round after christmas. The two easiest ways to cook are to either roast whole in foil, or poach in court bouillon in a large pan - I prefer the poaching , as its really hard to go wrong :) hers some links

ooh- forgot to say- I don't have a fish kettle Grin but I use a big stainless steel roasting pan with a lid. And I don't make my own court bouillon either - I use water with herbs/fennel etc and chuck in a fish stock cube!
