Healthy meal with pork tenderloin fillet.

Have just returned from DM's house, where we spent the weekend, with the usual few pounds around the waist & memories of delicious food.

Have also returned with a lovely pork tenderloin fillet that we didn't eat over the weekend.

My usual recipes would be somewhat stodgy & carb rich, involving lots of mash! But we want to get ourselves back on track.

Consequently I am seeking healthy recipe inspiration from you lovely mumsnetters. I thought about a sesame/soy/ginger variation with lots of green veg, but the only ones I've found have been chock full of brown sugar & honey Hmm that won't shift the pounds! I'd welcome a similar but less sugary alternative, or something totally different.

Any ideas most welcome - for myself, DH & DS (2).

Pork isn't the healthiest meat (but lovely)

Could you serve with lots and lots of veg and just a scoop of mash. I stew an apple when I am going pork (could add cinnamon too- it would be lovely)

Pork stroganoff made with low fat creme fraiche? You can serve it with rice (brown if you're feeling very virtuous)

Lean pork like tenderloin is one of the healthiest meats you can get! I roast it with peppers, onions, sweet potatoes and cherry tomatoes chucked over. Add whatever herbs you want.

I love this with pork - pretty healthy with the beans, and I use a bit of stock rather than the beer, and serve it with a small jacket potato.

Thanks for the ideas so far! They all sound great. Stroganoff sounds yum & the pork & beans I will store away for another occasion - definitely good for when we have things on the go and need a simmerer. I definitely approve, too of the 'similar meal; different proportions' idea of pork, mash & apple. I think this is a rule I need to take to heart & do with many of my meals.

At the moment I am veering towards the roast veg option. DH loves roast veg, and we are heading to the shops today so could pick up loads of fresh stuff. Colourful & healthy!

Definitely up for any other ideas that people have. It's so easy to get stuck in a rut & just do the same meal each time, isn't it?

Menu for the week written!

Meal 1: pork roasted with veg - peppers, red onion, new pots, sweet pots, carrots, peppers, ginger & herbs/spices (prob cumin, paprika)

Meal 2: stir fry sesame pork with spring greens, cabbage, broccoli, ginger, carrot, noodles, soy sauce

I tend to slit it open down the middle so it's almost in half and stuff with cheese - mozzarella or feta usually, then fold back together and wrap in bacon. Then wrap the whole thing tightly in foil and roast in the oven for about 30mins. The open it up and let it brown for another 10mins or so.

Serve with salad / roasted veg / cauli cheese!

I smash up fennel seeds and roll the pork in them. Briefly fry pork in a pan with a tiny bit of oil to get a bit of colour. Put the pork into a roasting tray with veg, celeriac is particularly good, or sliced fennel. Deglaze the pan with wine and stock, add garlic, maybe some chilli, add this to the roasting tin, cover and cook for around 45 mins to an hour, take the foil off for the last half hour or so.

If you do this with 150g of pork per head and celeriac rather than a starchy veg it's around 300 cals, we eat it often on a fast day and DP doesn't even notice it's low cal.

Long thin strips of pork marinated in some olive oil, soy and whole grain mustard, sometimes I add a little honey and then stir fried with veg is lovely. So juicy and melts in your mouth.
