Fillet of pork - anyone got any recipe suggestions ?

I got some the other day - not a big fan of pork but dp likes it and I thought this meat looked ok. Not sure what to do with it though - could just grill and serve with potatoes/veg but that seems a bit boring. Has anyone got any suggestions.

Pork parcels are nice:

Put fillet in a square of foil. Drizzle with a little oil. Put some slices of onion, mushroom & peppers on top, season with salt & pepper, a drop of lemon juice & (if you're feeling naughty) a tablespoon of single cream.
Fold up the parcel & cook in the oven (gas 6, 200 electric) for about 30 mins.
Serve with baked potatoes or baby new ones.

Also - but a chicken tonight or Homepride sauce - they work just as well with pork - especially the BBQ Homepride one

Fry onions and mushrooms. Fry off pork. Add flour and cook for 2 mins. Add sherry, cook for 10 mins. Add soured cream and serve with rice. Voila, Austrian Pork.

stuffed pork fillet with apple mustard and bay

open ot the fillet with a sharp knife by making incisions along the length
fill with a stuffing made from grated apple breadcrumbs, pinenuts and sausagemeat bound together with a little wholegrain mustard
roll the fillet up and secure with string or cocktail sticks
roll inor brush with a tniy bit of oil brush with wholegrain mustard. make incicions with a knife and squish in a few bayleaves
oven 200 degrees for 20-30 mnutes or olden brown
slice like a roulade
serve with nice gravy made from scrapings of roasting dish, some flour and veg stock
yum
