Packed lunch/picnic ideas for summer holiday day trips

Am planning lots of day trips avec bairns over the summer. What delicious things can we take with us eat? Don't want to lug a massive hamper around with us so must fit in our lunchboxes. Also don't want to spend hours preparing but a bit of time is fine. I eat anything, boys are semi fussy- eat a wide range of foods but don't really like "mixed up stuff" or sandwiches, which is a pain.

How about rolls? Scots prefer rolls to sarnies, anyway.

I made a silverside and a gammon joint in our self catering and we picniced off that for a week! Four adults and one 3-year-old.

Fruit salad, couscous/tabaloleh/barley/pasta salad, humus and pita 'crisps', homemade yoghurt and biscuits, olives and lots of good wine or beer.

Rolls are great b/c they don't crush or go soggy like bread.

Keep the meat separate, though, and the spreads, and assemble the roll on site.

We picnic all the time - it's fun and cheap.

expatinscotland- does your Martha Stewart recipe also involve fish? I love the sound of the the all-in-one sandwich, but don't eat fish...

A dip with crudites of carrots, cucumber, babycorn etc.

You can either buy the dip, or as is mandatory of mumsnet (sighs and rolls eyes), make one yourself - mayonnaise, mustard and honey mixed together for instance.
