Christmas leftovers

We were sensible this year and bought much smaller turkey/ham than in previous years.

Now - The ham is no problem - we always have Ham in Coke which seems to disappear in chunk loads every time anyone passes the fridge Wink.
The turkey, although smaller,
Is lingering though. We've had a couple of cold meat/pickle sessions and I'm thinking some kind of Singapore noodle fiesta. M also going to make some turkey stock.

Any other inspiration??

turkey, leek and ham pie? I often do a chicken, leek and ham pie with leftover ham and some chicken pieces. The pie filling freezes really well, so you can make a couple of batches.

Any ideas as to what I can do with lots of leftover rare roast beef?

Turkey and leek pie is good. I use Jamie Oliver's recipe and sometimes I'll use sliced potatoes as a top rather than pastry.

I'm planning on making turkey ham and leek pie, as above, also, turkey & chickpea curry, turkey, choritizo and butter bean rissoto, turkey fajitas and of course bubble and squeak patties which will also use all the leftover veg and stuffing today.

Stock was made in the slow cooker yesterday and the meals above will be made today/tomorrow and frozen so I can spread the turkey overload!
The excessive amount of turkey leftovers is not by choice, I am given a 12-14lb bird as a Christmas gift/bonus from work and there is only 4 of us for christmas dinner. I'm always on the look out for creative ways to use up the turkey as I'm sure as hell not binning a morsel.

I always buy a bottle of hoisin and fry the turkey so it goes crispy, add some chopped spring onions, then the hoisin et voila something a bit like crispy duck. Serve w rice, or in a wrap with shredded cucumber.
