Puff pastry tart toppings

I have got 2 new friends coming for lunch tomorrow and thought I might do a puff pastry tart. This will be a real novelty for me as my dh and dd are both wheat free so I've not made one before, hence this request for some suggestions for delicious topping!
One of them is vegetarian and I am allergic to goat's cheese (a vegetarian staple as far as I can tell) so hit me with some yummy ideas please?!

I've done green or red pesto, mozerella, cherry tomatoes, basil leaves and a bit of black pepper before and they're yummy.

Also done carmelised red onions and feta cheese, they were yummy too :)

Goat's cheese is a little tangy, that is probably why goat's cheese, red pepper (sweet) and puff pastry (also a little sweet) go well together.

What about filo pastry (layer a number of sheets , put a little olive oil on a sheet before you put the next on top) with feta and spinach (frozen spinach is best) and nutmeg. It is a Greek dish, can't remember its official name, but it is very nice and is even better if left in thr fridge for a day before eating day after.

I think that if you want to use mozzarella (often quite bland) you need to balance it with a stronger flavour to make it interesting.

Never tried it, but maybe rocquefort with nice mushrooms (a mix, maybe including dried and rehydrated porcini) to give sufficient flavour.

assorted mushrooms and gruyère with as bit of fresh thyme or artichoke, black olives, mozzarella, basil and chilli flakes or roast cherry toms and garlic with asparagus and parmesan . I think you need a nice crispy salad with a zesty dressing to go with it.

Chop up some baby spinach. Mix it with some cream cheese (with garlic and herbs if wished). Fry some mushrooms. Part bake the pastry sheet. Shove your spinachy cheese on the part baked pastry and whack the mushrooms over. Top with little chunks of camembert (if the veggie will eat it, otherwise use whatever they will eat) and cook until bubbling.

Artichoke and black olives is a good combo too, maybe with some red onion.

Thanks everyone, I made the pesto and mozzarella one (I don't like feta). It was delish, just need the wheat intolerant a to be out more often so I can try some of your other suggestions!
