Garlic

Hi,
I made my own pasta sauce for dinner, I usually use loads of garlic and it always tastes amazing.
Today's dinner was ruined by the garlic.
I stored it in the fridge and itlooked ok but as I was pressing it into the sauce it smelt a bit fusty. It was too late by that point as it was in the sauce.
Anyway I just ate (and my sons) the pasta and sauce which just tasted mouldy and ruined the while thing Hmm
Why did the garlic taste like that? It was fine the other day.
Have I poisoned myself and my sons?

Was it undercooked? It needs a little while to sweeten.
Perhaps is was a stale garlic past it's best?

I ate almost raw garlic a few weeks ago. Dh said the entire house stank of my dodgy breath Grin

Yes I cooked it for at least 30 minutes (gently). I did everything the same.
Just concerned we'll be ill.

Why do you keep garlic in the fridge? That will introduce moisture and make it go off/rotten. That is why you often see strings of garlic and onions hanging from the ceiling in old pictures. They keep better with a constant air-flow.

I keep garlic in a terracotta pot and it never goes off
Or you can buy frozen garlic which I always have in in case I run out

CVB, the terracotta will wick away any moisture, perfect.

I keep my garlic in the fridge and find it goes fusty quickly, had no idea about the moisture thing. Thanks for the tip.
