Would you do a dish like beef and guiness stew or something with red wine in and give it to a 1 year old? I'm not a very good cook don't know if this is okay or not?

I do. Long slow simmering burns off alcohol.

In Christmas cake and trifle the alcohol isnt cooked though. In answer to the op, yes I would. You don't get drunk on coq au vin or beef and Guinness pie!!

cooking does not remove all alcohol, but it does remove most of it apparently
