Potato wedges - please share your recipes/tips

I've quite a few potatoes & really fancy some wedges... What's the best method you've found for making scrumptious potato wedges? Last time I
microwaved whole (like jacket potatoes) then cut & put in preheated roasting tin with oil & seasoned &
cooked til golden (electric oven, at about 200C). They tasted great but were a bit tough. Hoping for a more soft middle with crispy skin. Any ideas or am I best sticking to roast potatoes but with same seasoning?

i chop pots up - including skin and sprinkle liberally with paprika and olive oil and roast till soft. i'm a lazy cook and they are very quick to do.

Cut into wedges with skin on, parboil for a few minutes, strain well and put back into the pan, give the pan a good shake so that they get a slightly fluffy look to them, drizzle with oil, season, generous amount of paprika, quick toss again, baking tray and into a hot oven for about half an hour.

Wedges... Done Grin
