lamb shoulder fillet

I never normally cook meat, but DH persuaded me to cook Sunday dinner this week (we tried inviting ourselves round to in-laws' but they are going out). I didn't know what meat to buy so have ended up with lamb shoulder fillets. There are no cooking instructions on the packet. Is this even a kind of lamb that can be roasted? If so, for how long? There are 2 pieces in the packet weighing a total of 224g. If not, what do I do with it instead? Google didn't help me with these questions.

Shoulder is a tougher meat and better slow cooked not roasted

I've copied and pasted this from the food network website

Shoulder

Lamb shoulder, rich in connective tissue, is your best choice for stews and braises. Shoulder is also sometimes sold cut into steaks. However it is cut, shoulder will be tough unless it is cooked for a long time, at which point it becomes meltingly tender and luscious.

So slow cooking is the way to go

a good link here with loads of lamb shoulder recipes Smile

ps Leg of lamb is better for a roast - (that doesn't include lamb shanks, - which I can vouch are FAB in a slow cooker)

Hmm, it's amazing roasted for hours BUT I think that the bone makes it nicer. But you could slow roast it or perhaps make a tajine/stew?

You don't need slow cooker, oven will do fine, just put into v.hot over covered with foil, turn doen to 160 and leave for few hours.

Lamb shoulder is normally best cooked slowly. You don't need a slow cooker, just do it in the oven. But... shoulder fillets are different. They're the best bit of the shoulder and need to be cooked differently. You could dice and casserole them or roast with vegetables. They'll take about 30 minutes at 180 degrees.
