Oh, gosh! £2 per person would mean £14 a meal in here. I think the only time that I would spend that is Christmas It's more like £2 a meal for us. I feed 4 adults, 1 teenage boy, 1 12 year old and an 8 year old.
Some favourites would be:
Chick pea and garlic soup - 1/2 a bag of dried chick peas, soaked and cooked, onions and lots of garlic, softened in olive oil, 3l veg stock, some dried basil or parsley. Simmer 20 minutes, blitz until half blended but still with bits of chick, Add around half a bag of pasta and simmer another 15 minutes. Serve with crusty bread.
tomato pasta bake - 1/2lb - 1lb mince, 2 onions, chopped, bit of garlic, oxo cube, tin chopped toms, little tin tom puree, tin cream of tomato soup. Brown mince with onions and garlic. Add all tomatoey things. Simmer about 20 minutes. Cook bag of pasta. Add cooked mince and about half a bag of frozen peas (thawed). Pour into baking dish, scatter with grated cheese and bake at 180 for about 25 minutes or so until cheese is melted and bake is bubbly and delicious. (serves 5-6 usually, I am veggie so don't eat it)
Creamy tuna - make 1 pint of white sauce, stir in a small tin of tuna and about 1/2 a bag of thawed frozen peas. Heat through. Serve with rice or pasta (serves 4-5 depending on how much rice/pasta you make)
chick pea and veg curry - the other half of the bag of dried chick peas up above, cooked. 1 bag frozen green beans, 2 tins of tomatoes, couple of chopped onions, curry powder/paste. Serve with flat bread or rice.
Bean chilli - Cook half a bag of dried pinto beans and half a bag of dried kidney beans. Make into chilli with onions, pepper, tomatoes, tom puree and spices.
lentil and potato curry - 1/2lb red lentils about 2lbs potatoes chopped, 2 onions softened in oil, 1 tin of coconut milk, 1 milk tin of water, curry powder to taste and a dollop of mango chutney if you have it. Cook everything together until potatoes and lentils are soft and liquid is absorbed. Keep you eye on it to make sure that it doesn't get too dry. Serve with flat bread (I double this)
Country pea soup - 1lb dried marrowfat peas, soaked over night, carrots, onions, leek, stock, 4 rashers bacon. Put peas in a big pan with plenty water to cover. Boil until almost soft. Add bacon, chopped into little bits and simmer until peas are completely cooked. Add plenty grated carrot, a couple of chopped onions and a chopped leek. Add enough water and a couple of stock cubed to make it soupy. Simmer for as long as you want until the peas have broken down and the soup is thick and rich.
Potato and bacon bake - other half of the packet of bacon cut into little bits, 4 large baking potatoes, thinly sliced, couple of onions chopped, 1 pint white sauce, salt, pepper, garlic and nutmeg. Layer the potatoes, onions and bacon in a baking dish, seasoning between each cycle. Pour over the sauce, bake at 160 for about 1 1/2-2hours until potatoes are soft. Serve with carrots and, maybe, cabbage. (serves 4)
Cauliflower and bacon soup - 1/2 a bag of frozen cauli florets, 4 rashers bacon, chopped, 2 onions, chopped, 2 potatoes, diced, veg stock, bit of garlic. Simmer everything together for about 20mins - half an hour until veg is all cooked. Serve with crusty bread. (I double this)
Sticky chicken wings - box chicken wings, tablespoons of tomato ketchup, 6tblspoons honey, 1tspn chilli powder. Mix ketchup, honey and chilli powder together. Mix chicken wings through so that they are well coated. Leave in the fridge for about an hour and then roast acc. packet instructions. This works with with drumsticks/thighs as well. Kids like them with chips and veg.
lentil and rice tacos - 2 cups lentils, 2 cups rice, 10 cups veg stock, 2 onions, chopped, taco seasoning to taste. Simmer together until liquid is absorbed and lentils and rice are cooked. Use to fill tacos or wraps, top with a little grated cheese and some salad leaves.
Mandarin pork - (don't make this often) 1lb diced pork, 2 chopped onions, 1 or 2 chopped red peppers, big tin of mandarin pieces (drain but keep the juice), couple of tblspns brown sugar, couple of tblspns lemon juice, 1tblspn corn flour, chicken oxo cube enough water to make the mandarin juice up to about 8floz. Brown the pork in a little oil and then remove it from the pan. Add everything else, except the mandarin segments. Stir the sauce until it begins to thicken. Add back pork and cook about 20 minutes until pork is cooked through and veg is done. Add mandarins and heat through. Serve with mash and green veg.
