Please help with over ripe bananas!

I have 4 that I dont want to throw out, but I have only got plain or bread flour, no butter, no brown sugar and basically haven't got the money/inclination to go to the shop and buy the rest of the ingredients for banana bread. Anyone else got any genius ideas?!

Put them in the freezer until you have the ingredients that you need.

Chop them and put them in the freezer. Once frozen, put in a blender with Greek yogurt and brown sugar and presto! Delicious instant banana ice-cream. Brilliant texture and flavor and also healthy. Try it.

That sounds amazing.

I've got three over-ripe medium-large bananas in the freezer right now.. What quantities of Greek yog and sugar should I add?

Also, I've got Demerara or soft brown sugar - which is best? Soft brown, presumably as Dem would stay a bit gritty?

I always make these banana muffins when I have bananas too ripe for anything else...


300g SR flour
1tsp Baking powder
1/2 tsp bicarb
Generous tsp ground cinnamon
Pinch salt
75g sugar
75g butter, melted
125ml milk
2 tbs honey
1 tsp vanilla essence
2 eggs
2 mashed bananas
Good handful sultanas

Preheat oven to 180°C. LIne muffin tin with paper cases or squares of greaseproof paper.

Sift flour, baking powder, bicarbonate of soda, cinnamon and salt into a large bowl. Stir in sugar and sultanas

Combine melted butter, milk, honey, vanilla, eggs and mashed banana in a large jug. Whisk until well combined.

Make a well in the centre of dry ingredients. Add egg mixture, stir until just combined (do not overmix). Spoon mixture into muffin tin.

Bake for 20 minutes

I know you didn't have the necessary ingredients when you posted this op, but one day you might....

The malaysians make yummy banana fritters, basically all you need iirc is bananas flour and sugar. I have a recipe somewhere I cn dig it out for when you next find yourself in this situation if u want

Hi Schtum. Re the instant healthy banana icecream, I just use what I have around. Best sugar is soft brown or caster sugar, not demerara or even granulated as the texture won't be as good. As for the ratio banana to yogurt, I try half and half, roughly.

It helps chopping the bananas up in pieces as it will be easier for the blender to cope with it. Don't defrost them, just blitz the whole thing up, serve and enjoy the compliments!

Hi there I'll dig out the recipe book tomorrow where I wrote it down. I'm quite excited- this will be my first recipe I'll have posted on here:) it's an authentic one too, given to mE by a Malaysian friend at university 10 years ago :)
