quinoa - your favourite recipes please

Hi,

I am trying to add more quinoa into our diets because of its great health benefits but am failing at finding good recipes. Does anyone have some tried and tested favourites that they are willing to share? Here is my favourite:

This is yummy. I use ordinary quinoa (haven't seen the red one) and don't always have spinach to hand. Also I think I now use about half the amount of quinoa recommended. It is yummy though.

I replace any recipe that uses rice with quinoa and it's usually lovely. Rice pilaf recipes especially. I've made Indian style pilau quinoa as well.

The other thing I use quinoa for is just plain boiled, and then as a bed for beef stew, spag bol, chilli con carne, chicken with leeks, etc. Just use whenever you'd have either mash or rice as your fluffy base that soaks up all the sauce Smile

This is basic but I love it and sort of made it up. It's just cooked quinoa which is cooled, add blueberries, sliced orange and a can of washed chick peas. Squeeze the juice of the orange over the quinoa and stir well.
It might be revolting to everyone else but I have odd taste

I love quinoa! These are my 2 favourite recipes:

Quinoa Stuffed Peppers

Quinoa Pizza Casserole

The recipes are American, so measurements are in cups, but a quick google will convert them.

Both are delicious and loved by the whole family. The Pizza Casserole is great as you can choose whatever toppings you'd normally put on pizza and let the children top their own once at the table. I must make that again soon, had the stuffed peppers on Monday, yum! :)
