Chutney - I have tomatoes, plums, shallots - spices?

Can I use red wine vinegar instead of white?

What spices would you add to this mix?
Any recipes kicking around?

I have a gorgeous Gordon Ramsay tomato chutney recipe but it uses white wine vinegar and red onions not plums and shallots.

I think it would be delish with what you've mentioned though I've not seen red wine vinegar used before. As for spices - black onion sedds? Star anise?

Hmm - I think I shall go out and get white wine vinegar - just in case it changes the taste.
Another recipe had mentioned black onion seeds - are they readily available from the supermarket?

Last years chutney was green onion chutney and it used shallots - so thats why I got them again this year - though my toms are red and yellow this year. mmm - may go with red onion too and freeze shallots.

I got my black onion seeds from Sainsbo's - just a Schwartz jar, so imagine they are easy to come by. I didn't have plums, but added fresh fennel and fennel seeds, but I don't think this would go with plums. You could try allspice maybe.

I couldn't find onion seeds in my local co-op - maybe next time I'm sainsbos.

I used mustard seeds, shallots, white wine vinegar, brown sugar, plum and diff colours of tomatoes. Jarred up 3/4 of it - then added some chillis to the last 2 jars worth.

Will leave for a month now and see if the vinegary taste disappears.

I used less wine vinegar then the recipe called for - and it was still really runny at the end - so goodness what it would have been like if I'd used the recommended amount of it!
